MUGHLAI RICE (LUXURIOUS PILAU RICE WITH ALMOND FLAKES AND DRIED FRUITS) |

Aromatic rice served to the Mughal Kings of the 16th century! Served hot.
For 4 people as part of a main meal

You will need : |
|
180g washed uncooked rice (preferably long grain Basmati),
1/3-1/2 onion sliced,
1 teaspoon Pilau rice blend,
20-30g almond flakes (optional),
20-30g dried fruit such as raisins (optional),
Fresh coriander, finely chopped
|

Method : |
|
Heat one teaspoon of oil or 10g of butter in a saucepan.
Add the onion and fry until golden brown.
Add one rounded teaspoon of Pilau Spice blend, dried fruit and almond flakes
for 30-45 seconds.
Add 180g of washed rice (for best results, use long grain long grain Basmati) and mix well.
Add 500ml of cold water.
Bring to the boil, cover and simmer for 15-20 minutes until rice is fully cooked.
Tip: If grains are still not cooked, sprinkle with water and continue cooking on a low gas until fully cooked.
Garnish with freshly chopped coriander.
Serve hot with a curry of your choice using our Meat Masala or Vegetarian Masala blends.
