POTATO AND GREEN PEPPERS (ALU SIMLA MIRCH)
Description :
A great favourite which can be enjoyed in many different ways! Served hot. For 4 people as part of a main meal
Cooking Time :
approx 15-20 minutes
You will need :
2 medium to large raw potatoes chopped in cubes, 2 large green raw peppers chopped in cubes, 1 dessert spoon vegetable oil, 1 teaspoon cumin seeds (optional), 1/3 onion, diced, 1 dessert spoon tomato puree, Vegetarian Masala by Chaat House, fresh coriander, finely chopped
Method :
On a medium flame, heat the oil in a saucepan. Add the cumin seeds and temper (optional). Add the onion and brown. Add the tomato puree and half a cup of water. Add 1 dessert spoon of Vegetarian masala. Cook for 3 minutes. Add the raw potatoes and green peppers and mix well. Add enough water to half cover the vegetables. Bring to the boil and then simmer until vegetables are fully cooked and water has evaporated. Tip: Check water content 8-10 minutes into simmering time and add a little more water if vegetables still appear too raw. Check salt 5 minutes before cooking is complete and add more to taste if required. Garnish with finely chopped coriander and serve hot with chappati bread or pilau rice.
Tip :
Enjoy the leftovers as a filler for toasted sandwiches!
