CHAAT
'Chaat' refers to a North Indian dish made up of a number of freshly made ingredients.  It is also the literal translation in Hindi for fingerlickin'! It was developed in the 16th century by royal command. Legend has it that the reigning Mughal emperor, Shah Jehan, asked his hakeems (natural doctors) to come up with a healthy dish that would combat the city's bad water supply. The combination of ingredients was so delicious that people usually finished by licking their fingers!

‘Masala’ is the Hindi word for spices or blend of spices.A true Delhi citizen will sprinkle spices over just about any dish – even French fries! Delhi cuisine is therefore always spicy – not to be confused with chilli.Spices are used for the flavour, aroma and health properties.
